Humans need to satisfy their metabolic needs, even in deep space. The food provided to astronauts is therefore a particularly relevant issue for long-term manned missions (moon and Mars bases). For these missions, sufficient food cannot be brought from Earth - a major part has to be produced on board. Since food cannot be produced by physical-chemical processes, plants are likely to be the main source of food and the basis of the astronauts' diet.
Plant production, their treatment and transformation into nutritious and tasty recipes, under stringent quality control, are therefore an important research topic undertaken within the MELiSSA project.
